Chapter One · Dawn

Before the city wakes,
the kitchen already has.

Whole lamb shoulder laid on butcher paper alongside bunches of fresh herbs — rosemary, thyme, and flat-leaf parsley rinsed and glistening

At 5:30am the first delivery arrives — a whole lamb, halal-certified, from a farm two hours north. It comes cool and clean, wrapped in paper. By 6am it's portioned, seasoned with a paste of cumin, coriander, and saffron-steeped water, and lowered into a cast-iron pot that won't be opened for eight hours.

The herbs come next — bunches of flat-leaf parsley, cilantro, and mint rinsed under cold water and laid on linen towels to dry. Nothing is rushed. Nothing from a jar.
